Ingredients:
10 Potatoes
Salt to taste
Red Pepper to taste
Crush bread crumps
1/2 cup all purpose flour
1 Grated raddish
1/2 cup chopped onions
1/2 cup chooped coriander
cooked choley
yoghurt
Imli chutney
Mint chutney
Sev
Oil to fry

Method:

• Boil the Potatoes in the cooker
• Let the Potatoes cool down for 1 hour
• Mash the boiled potatoes and mix with all purpose flour, bread crumps, salt and pepper
• Make small balls of potatoes and flatten them
• Heat oil in a pan and fry the potato balls till golden brown on medium heat
• Serve Hot Tikki's with Imli chutnet, mint chutney, raddish, onions, yogurt, choley and Sev.

Quantity : 6-8 people

Barva Tomato

Few days back i spent some time with a friend who was cooking Barva Tomato for the Dinner. I really liked the way she made this awesome curry, ever since i wanted to try it for myself with some tweaks. Here is the recipe i tried and it turned out really great. Awesome to treat your friends and family with this delicious recipe



Ingredients

  • 6 Tomatoes cut in half (12 pieces)

  • 1 cup onions - Chopped

  • Some Ginger - Chopped

  • 2-3 green chillies - Chopped

  • 1 cup Shredded Paneer

  • 1/2 cup Peas (Put them in water to soften them)

  • Salt to taste (I used 1teaspoons)

  • Red Pepper to taste (I used 1 teaspoon)

  • Garam Masala to taste (I used 1/2 teaspoon)

  • Pinch of Cinnamon Powder

  • 1/2 teaspoon Cumin seeds

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon coriander powder

  • 1 tablespoon Oil


Making the Tomato Filling:

  • Empty the tomatoes from inside, take out the pulp and save it in a separate bowl

  • Add Paneer, Peas, salt, red pepper and garam masala in the Bowl and mix it to make the filling for tomatoes

  • Brush the inside of tomatoes with little butter if you would like or you can miss this step Fill the tomatoes with the Panner and Peas filling that was prepared and keep them aside
Method:

  • Heat oil in a pan Add Cumin seeds and onions and Saute the onions till golden brown.

  • Add Ginger, Green Chillies and tomato pulp and Saute them with onions

  • Add little Salt, Red Pepper, Pinch of Cinnamon, Turmeric, and coriander to the mix and saute them together (Remember you already added salt and pepper in the filling so be careful not to add lot of salt. Also you can add little milk before adding salt)

  • Cover the Pan and keep it on low heat for 5 minutes.

  • Add very very little water if mix sticks to the Pan, Stir it occasionally

  • Add the Filled Tomatoes to the Pan and cover the Pan for 5-10 minutes on a low heat

  • Garnish with cilantro Best Served with Paranthas or Rotis

Punjabi Chole - Garbanzo Beans

This is one of the easiest recipes which i often make and yet please my friends.
Few days back some of my friends had come visit us and i made Puri Chole for them. They all enjoyed my recipe and asked if i can post it too. So this is for my awesome friends

Ingredients

250 gms white Chole /Garbanzo beans - Soaked Overnight
1 big onion - Chopped
3-4 Tomatoes - Chopped
Some Ginger - Chopped
2-3 green chillies - Chopped
Salt to taste (I used 2 teaspoons)
2 teaspoons Chana Masala
1 teaspoon Amla powder
Red Pepper to taste (I used 1 teaspoon)
Garam Masala to taste (I used 1/2 teaspoon)
Pinch of Cinnamon Powder
1/2 teaspoons Cumin seeds
1 teaspoon corriander powder
1 tablespoon Oil
Oil to Saute

Method:
• For Chole - Clean, wash and soak the Chole Overnight
• Boil Chole in the Pressure Cooker with enough water, Add the salt too (may be for 4-5 whistles)
• Heat oil in a pan and Saute the onions till golden brown.
• Add Ginger, Green Chillies and tomotoes and Saute them with onions.
• Add Chana Masala, Amla Powder, Red Pepper to the mix and saute them together.
• Take out the access water from the Boiled Chana and add Chana to the saute Mix.
• Cover the Pan and keep it on low heat and let the Masala dissolve in Chana properly for about 15-20 minutes. Stir it occassionally.
•Add Garam Masala in the end
•Add few lemon drops (2-3)
• Garnish with coriander or Paneer or Onions.
• Serve with Puri's or Bathura's

Quantity: good for 6-10 people

Dahi Bada

This is one of the favorite north indian dish for people who love to eat yogurt. My daughter love dahi bada and demands for it every now and then. Believe me its really simple to prepare and adds flavor to your food.

For Bada:
1 Cup Moong daal
½ cup Urad daal
Salt to taste
Baking soda (pinch)
Oil to fry

For Dahi :
1 kg Dahi (yogurt)
Finely chopped coriander leaves
1-2 green chilies chopped
Salt to taste
1 tsp Sugar or to taste
Dahi Vada Masala


Method:
• For Bada - Clean, wash and soak both the daals for atleast 3-5 hrs
• Grind it into smooth paste.
• Add salt to taste.
• Add pinch of baking soda (If you would soak the daals overnight, you will not need to add baking soda to soften it else you must)
• Heat oil in a pan and drop a spoonfuls of batter and fry till golden brown.
• Take the hot vadas and put in cold water for 2-3 minutes.
• Now Take them out of water and squeeze the water and keep aside.
• For Dahi - Blend the curd (yogurt) and little water until it is smooth.
• Keep in refrigerator for an hour to get chilled.
• Add salt, sugar and dahi Bada Masala
• Serving - In a deep dish arrange wada and pour dahi over them.
• Now add imli (tamarind) chutney and green chutney.
• Garnish with coriander.
• Serve the dahi vadas chilled

Aloo Chat

Ingredients:

Tomato Ketchup
Lime juice or fresh Lemon
Oil to fry

Method:

• Boil the Potatoes in the cooker ( do not over boil them that they start breaking)
• Let the Potatoes cool down for 1-2 hours
• Cut the boiled potatoes in big pieces
• Heat oil in a pan and fry the potato pieces till golden brown.
• Take a big dish, add fried potatoes
• Add salt to taste, red pepper to taste, 2 tsp Lime juice or 2 tsp Ketchup and mix all thoroughly.
• Aloo Chat is ready to be served

Quantity : 4-6 people

Aloo Gobi

Ingredients

1 medium sized cauliflower cut in medium sized pieces
2-3 Potatoes cut in medium sized pieces
2- tbsp cooking oil
2 green chilies, chopped
1 onion chopped
2 tomatoes, chopped
2 tsp ground coriander
1 1/2 tsp ground cumin
1/2 tsp turmeric powder
1/2 - 1tsp red chili powder or as per taste
1 tsp Salt or To Taste
1/2 tsp garam masala
1/2-inch ginger, chopped
finely chopped coriander leaves


Method:
• Heat oil and sauté onions till golden, then add chopped ginger and green chilies. Sauté for 5 minutes.
• Add tomatoes, coriander, cumin, turmeric and chili powder, sauté over low heat until the oil separates.
• Add chopped Gobi and Aloo, salt (1/2 tsp or to taste), and half of the coriander leaves. Simmer, over low medium heat and cover the cooking pan until the Aloo and Gobi are soft . Also stir in once in a while . Make sure to use flat stirrer and do not over stir it.
• Add a pinch of garam masala, coriander leaves

Quantity: 4-6 people

Moong Daal Bada

Ingredients:

1 Cup Moong daal

1 tsp Grounded coriander
1 tsp Garam Masala
2 tsp Kasuri Methi
1 tsp Red Pepper or to taste
Chopped green chillies
Baking soda (pinch)
Oil to fry

Method :

· For Bada - Clean, wash and soak the daal for atleast 3-5 hrs
· Grind it into smooth paste.
· Add salt to taste, grounded coriander, garam masala, kasuri methi, red pepper and chopped green chillies
· Add pinch of baking soda
· Heat oil in a pan and drop spoonfuls of batter and fry till golden brown.
· Hot Badas are ready to be served
· Serve them hot with - imli (tamarind) chutney and green chutney.
